Zualita’s Fajitas
1/2 cup of chopped cilantro
About a 1/3 cup of olive oil
About 1/8 cup of soy sauce
1/4 cup of orange juice
Two tablespoons of lime juice and one teaspoon of lemon juice
Two tablespoons of apple cider vinegar
1/4 cup strong coffee
4 or 5 garlic cloves, minced
One diced and seeded jalapeno. I keep the seeds in because I like it hot!
2 teaspoons of chili powder
2 teaspoons of cumin
One teaspoon of ancho chili powder. I use Spiceology Mexican Chili Powder.
2 teaspoons of garlic powder. I like garlic!
About 1 tsp of onion powder
One teaspoon of kosher salt
And about 2 lbs of round steak sliced into thin strips.
I mix all of the ingredients together except for my steak and mix well.
Then add the steak, stir and put in a Ziploc gallon bag for a few hours.
Heat up a cast iron pan and add a couple of spoonfuls of coconut oil. Once it is crackling, add in some sliced red, yellow and green peppers, along with some onions. While they are cooking, take the meat out of the bag and discard marinade. Add to the sizzling hot pan long enough to brown the sides, about three minutes. Stir and cook for another minute. Steak should be pink still. If you want it well-done, cook it longer. Serve immediately with warmed corn tortillas, lettuce, shredded cheese and sour cream. Yummy😋
