Mama’s Favorite Steak!

2-3 lb London Broil Cut

If you do research on what an actual London Broil is, you will find many explanations. In a nutshell, it is a tougher piece of beef that has been marinated and broiled. Here in North Idaho, the butchers have an actual cut that they call London Broil. Prepare as directed below and be amazed at how tender and delicious this affordable cut can be!

For the Marinade:

  • ¾ cup Soy Sauce

  • 2 TBSP Balsamic Vinegar

  • 2 TBSP Worcestershire Sauce

  • 2 TBSP Olive Oil

  • 1 TBSP Lemon Juice

  • 1 tsp Minced Ginger

  • 1 tsp Minced Garlic or ½ tsp Powdered Garlic

  • 2 TBSP Sweetener of Choice (brown sugar, coconut sugar, monkfruit)

Mix up your marinade and pour over your London Broil Beef Cut. Some use Zip Loc bags, I used a glass baking dish with a lid. Marinate in the fridge for at least 2 hours and up to 8 hours. After that, the fibers in the beef start to break down. When ready, heat up your grill. I have a searing station that I put on high for this part. Place your marinated meat on a hot grill for 4 minutes each side. Keep the lid open. Make sure you get those nice dark brown grill lines. Then move to another preheated part of the grill that is not as hot (medium flame). Close your lid and start checking for your desired doneness in about 7 minutes. I like medium rare, so I pulled it off at 125 degrees. A good meat thermometer is a must. Let it rest for 10 minutes, then slice thin. Position your knife against the direction of the grain. This is important!

Serve this yummy meat alongside a tossed salad, baked potato (wrap in foil and prepare them on the grill!) and as a special treat, grill up some garlic scapes. These are readily available in the spring. Gather about a pound, wash and trim them, but leave them whole. Then brush with olive oil, salt and pepper. Place on the grill over medium flame while cooking your London Broil. They should be ready in 15 minutes or so. You’ll know when they are soft on the inside, yet golden brown and bright green on the outside. You can find these in your garden or pick some up at Homestead Produce.
